What Is A Scent Dinner?
I first came across the idea of a Scent Dinner by watching the beautifully glamorous Sue Phillips talking to Scent World on YouTube. At the pinnacle of her craft, having created scents for Tiffany and Lancome, she now has her own Perfume brand - Sue Phillips House Of Fragrance.
Through her brand, she offers ‘Sip, Sniff & Savor’ Scent Dinner experiences. Sue describes these as “culinary journeys”, dining with sumptuous scents that complement and enhance the food being served.
This takes the original concept of defining ambiances of commercial settings through scent, then focuses it on the dining room setting.
Scent Dinners then go deeper by pairing scents or essential oils with the food being served. Take it another notch further by then coordinating the scents with the wine, in just the same way as you would choose the drink to complement ingredients.
Using essential oil instead of perfume means we can implement food flavors as well as fragrances at our Scent Dinner.
Fostering Mindful Connection
In this modern world, many of us are really disconnected from our senses. Turning on our senses by sniffing, sipping, and savoring we can improve our connection to self and the world around us. Slowing down to explore, discover, and savor, anchors you into the present moment. It can relax, reduce your cortisol levels, and decrease stress.
You have heard of the saying that we ‘eat with our eyes’, but how often do we truly ‘eat with our nose’? How good would your sense of smell be without your eyesight? Could you tell the difference between a pork chop and a filet steak? Could you discern the difference between a nectarine and a peach?
A Scent Dinner fosters your connection to yourself, to what your experience of scent is, and to what memories and feelings it evokes for you. For example, Vanilla inspires joy and comfort in many people because so many childhood memories are connected to comforting food laced with Vanilla. What would happen if you wore a blindfold to eat your next meal? Scent Dinners interrogate the close connections between our senses of smell and taste to create multi-sensory gastronomic events that are fascinating.
Hosting a Scent dinner would be perfect to enhance the Thanksgiving or Holiday experience. They are a perfect way to connect with family and friends and to give them an experience like no other. Scent dinners are mindful at their most joyous.
Professional Scent Dinners
Before we get into creating our Scent Dinners, here are some examples of how the stars are doing it!
Chandler Burr
Chandler Burr, a celebrated author of scent, got on the scene quickly with his Scent Dinner concepts.
He describes them as a ‘Combination of fine dining with a stimulating interactive master class in scent & perfume, two parallel dinners, one olfactory and invisible, the other gustatory and edible. A Scent Dinner is the intersection of fragrance and fine dining.
He tantalizes his guests with gourmand (food-like) aromas, matching them to scents like the original 1925 D'Shalimar from Guerlain. Mugler’s perfume Angel is based around the molecule ethyl maltol, which evokes the taste of cotton candy, playing on the close alliance between scent and taste.
His website states that his dinners are accompanied by the delicate spice of Indian saffron, the fruitiness of Peruvian pink peppercorn, the invigorating scent of French mint, and the deeply sensuous tones of Brazilian cacao.
Bodha
Scent creators of Bodha. Emily and Fred also offer Scent Dinners in LA.
Each of their five courses is structured around a different classic scent profile.
(This had me thinking of things on a whole new level and really inspired my thinking)
Emily and Fred at Bodha went with:
- Fruity/Lactonic for the first course, the classic combination of milk and fruit. But it does not have to be sweet, think outside the box. A Tomato and Mozzarella Caprese has that fruity, milky character but in a more savory way.
- Herbal/Marine for the second course, perfect for fish, seafood sea vegetables,, and even wild coastal herbs. Speaking the language of the ocean and rugged coastline, simply delicious
- Earthy/Mineralic for the third course, which would undoubtedly be meat based. Blood can taste mineralic, like copper sometimes. Think of a rare steak. Go Vegetarian or Vegan with mushrooms, truffles or root vegetables like Celeriac.
- Woody/Smokey for the fourth course which would be perfect for smoked fish, or even cheeses where the scent of the wood comes through the smoke. Applewood Cheese, Oak Smoked Salt and Hickory Smoked Duck. I’m salivating.
- Floral/Powdery for the final course, that wonderful combination of soft florals with a powdery finish. Think Rose Panna Cotta dusted with powdered sugar, Rose Geranium Macarons or even an Elderflower Strawberry Shortcake. Are you salivating with me yet?
It’s inspiring isn’t it? It makes you think about what you can create for yourself at home for your own Scent Dinner.
Bodha leaves you with a final gift of a couple of rather delicious recipes. Incense Smoke Potatoes & Rose Geranium Leaf Pound Cake. I have never tried Makko powder used in the Incensed Smoked Potatoes, so I cannot attest to that. However, I already use Rose Geranium widely in my cooking and my Apple and Rose Geranium Jelly is one of my most requested preserves by friends and family. It’s luscious.
I can also see how you apply essential oils to both of these recipes to enhance the flavors.
Ethereal Feast
Finally take a look at Ethereal Feast, a collaboration between a master chef Ines, and behavioral science expert Lisa. They describe their Scent Dinner as ‘The “Ethereal Feast” is a unique and immersive experience that offers a transformative journey through food, conversation, and introspection. It involves a carefully curated menu designed to engage all the senses, including taste, smell, sight, touch, and sound’.
It looks like they are going a step further and engaging ALL of the senses, sight, touch and sound too. Perhaps, that might spark your own creativity and give you some inspiration around creating your own Scent Dinner in the comfort of your own home.
How Can I Create My Own Scent Dinner?
Since you are creating a variety of layers to the experience, beyond those just of the food, creating a Scent Dinner requires a lots of forethought and planning
The first thing you need to do is to remind yourself that most Scent Dinners are a collaboration between master perfumers and Michelin starred chefs, so don’t be too hard on yourself. Have realistic expectations.
Be assured that, even if you don’t have superlative culinary or perfumery skills, you do have enough knowledge and wherewithal to create an incredible multi-sensory experience with the skills.
Follow the instructions in this article and the next one and you will end up smelling of roses!
Define your Scents
Ask yourself:
- What do you want to create?
- What are you trying to inspire in your guests?
- What feelings are you trying to evoke?
- How are your chosen scents going to deliver your vision?
What Do I Need For A Scent Dinner?
In truth, much more than you would need for a normal dinner party. Good food, excellent company, delicious wine, and a bit of background music. But the guest who will bring that je ne sais pas to your scent dinner, is of course, fragrance.
Good Food
You are inviting your guests to fully immerse themselves and their senses in this dinner, to be present and mindful. To savor the flavor, texture and aroma of your food. So, you need to make sure it is good quality food to start with.
Good quality does not have to be expensive. I would much rather have a better quality pork chop than an inferior filet steak. Buy the best quality you can afford and don’t be afraid to go for a better quality cut of ‘cheaper’ meat. If you can afford organic, grass fed skirt steak, buy that! Grab the dirty carrots from the farmers market and on the day, buy the perfectly ripe fruit you’d normally reject because it would not stand sitting in a fruit bowl for a few days.
Smell the food you are buying, is it appealing? What do you notice? What will your guests notice?
Essential Oils
Despite how we always tell you not to ingest essential oils, you can also include essential oils in your cooking.
It is safe to use essential oils in your food and drink if you KNOW what you're doing and indeed the USA food and drinks industry is the fastest growing purchaser of the world’s essential oils.

Recipes Fit For Essential Oils
Essential oils need to be diluted into some kind of fat or alcohol or into honey. Otherwise, they will just float on the surface of your sauce. More experienced cooks will probably find this easier than those with less experience, but choose recipes with either little process or where you can add the essential oil in a sauce, condiment or dressing. Oil and vinegar dressings are the perfect carriers for essential oils for those who are less confident in their culinary skills.
They are powerfully concentrated and super intense, but when it comes to heat, they are delicate and need careful handling. They don’t like very hot or elongated cooking processes. When researching recipes to incorporate essential oils, opt for ones that use processes that will not degrade the quality, intensity or fragrance of the essential oil. It would be pointless putting essential oils into a casserole you are about to cook for 6 hours!
Likewise, since you need to dilute your oil in fat for it to disperse, you don’t want to use it in a clear consomme broth either!
Look for recipes that are not cooked for a great deal of time, where you can add the essential oils into fat elements like butter and cream, which can be drizzled over or through the food.
You can try scenting sugar or salt with essential oils and using them as a seasoning, however since neither salt or sugar dilute essential oils, blend them into a carrier oil before mixing.
Wine
Step into the role of a Sommelier and assess the qualities and the nose of the wine and how it relates to your planned menu.
If you are serving a Bodha-inspired Caprese with the fruity and lactonic notes. Look for white wines with a crisp fruity note that will emulate the fruit on the plate, juicy tomatoes, fragrant basil and creamy mozzarella. The acidity of wines like Pinot Grigio or Verdicchio balance the sweetness from the tomato and the rich cream of the cheese.
Take the time to pair your wines with your food and even more care to pair it with the chosen essential oils or scent. Pinot Grigio and Sweet Basil are a marriage made in heaven, alongside the Italian giant of Oregano. One drop in a light dressing can transport you from Stockton to Sorrento in a heartbeat.
Remember to choose your wine or drinks, to complement with your essential oils as well as with your food choices.

Music
A Scent Dinner is a feast for the senses so choose your music with care too. Maybe consider a gentle shift or change with each course to match the scent and food.

Frankincense evokes The Lord Of The Dance, originally a Shaker song that evolved, I love this Dubliners rendition.
Patchouli will forever inspire the Rock Anthems of my teenage years like, Whitesnake’s Here I Go Again.
What they all have in common is a ‘rousing’ theme, these are oils that rouse you, bring you alive and so does the music. I’m totally aware it’s a strange, and totally unsuitable, dinner party playlist, but you get my drift?
Invite The Right Guests
You want people to engage with the experience and find joy in it! Don’t feel you have to invite Uncle Tom, when all he ever wants to eat is Steak and to drink Beer. He’s not going to thank you for the experience and you won’t thank him for, well, ... .being himself!
You want guests that bring their own personal impressions and opinions to the conversation. Guests that will engage in relaxed conversation around their individual perceptions of scents and taste. Your guests will learn as much about each other, as they will from the scent and food you choose.
It’s meant to be a relaxed, enjoyable and joyous experience to immerse yourself totally in. Choose guests that will appreciate that and all your hard work.
If your best mate would hate it, don’t invite them! And don’t feel guilty about it either.
Invite guests who will appreciate the experience!

Best Essential Oils For A Scent Dinner
This is where you want to spend your money for your Scent Dinner.
If you are going to buy essential oils, call up your company and ask if the oils are of a quality suitable for ingestion in food.
Don’t just call up and ask, “Can I take this internally”? Because most customer service assistants are trained to tell you “No”! Explain what you need in more detail, so they answer you more concisely and correctly.
READ the labels, read the fineprint, it will always likely say for topical use only. If it actively states that it is ‘non - consumable’ this could be indicative that the company knows there are some contaminants or fillers in their oils.
Avoid absolutes or essential oils that may be extracted with solvents. . Our Vanilla Oleoresin is a sublime scent, but it is solvent extracted and not suitable for use in food.
The problem you will always run into is… liability. Companies don’t WANT to tell you they are safe to consume and open themselves up to lawsuits. Use your common sense, do your research and take your OWN responsibility using essential oils for your Scent Dinner.
Buy organic where possible and if in doubt, leave it out!
Essential Oil Safety
Do not use any essential oils in the first 16 weeks of pregnancy, avoid Rose, Ylang Ylang in the first 37 weeks and don’t use Fennel at all. I have marked essential oils with more complex contraindications with an asterisk*. Please see the Safety Synopsis on the individual essential oil webpages before using in any recipe.
Citrus Fruits
Honestly I feel that the citrus fruits are some of the easiest to use in Scent Dinner recipes and give you sparkling zingy effects that ignite your joy. They are just so enlivening and uplifting. I love them.
Bergamot is widely used in the industry for Earl Grey Tea and I consume it every day, several times a day! Bergamot has wonderful antidepressant qualities we can harness.
The sharpness of Grapefruit, Lemon and Lime can be used in Granitas and even mouth puckering cocktails. Tone them down and use them in mouthwatering creams, custards and sauces. They add a freshness to dressings and butters for fish and seafood. All of these oils have uplifting and invigorating qualities that can improve our mood
I test myself and see if I can tell the difference between Mandarin, Blood Orange, Sweet Orange and Tangerine with my eyes shut. I can now, can you? Can you guests? This could be the making of a wonderful food tasting game for your Scent Dinner, which jelly / ice-cream / cookie is which?
Herbs & Grasses
We have a wonderful array of herbs at our disposal when it comes to cooking our Scent Dinner and we have just the same variety when it comes to which essential oils that we can use too.
Move cautiously with Bay* and Rosemary*, as they have the most contraindications.
Use Basil in a dressing for that Caprese salad, maybe add a tang of Lemongrass to sharpen and uplift it and balance the creaminess of the Mozzarella. Basil has digestive actions that can help us digest these sumptuous foods.
Out of dried Oregano or Marjoram for your pizza sauce? Add a couple of drops of each into a dash of olive oil and add it to your tomato sauce. They are perfect for tomatoes based Scent Dinner sauces.
Give your Gin and Tonic an extra kick of Juniper and a drop of Lemon for extra zing! Both Juniper and Lemon essential oils have anti-rheumatic actions. Who needs a better excuse than a G&T to soothe your rheumatic aches and pains?
Got a nice piece of Salmon? Try a melted butter finish on it with a couple of drops of Dill or even the lovely aniseed notes of Fennel for a proper Scandinavian twist. Both of these essential oils have digestive and stimulant properties to take advantage of.
Give your Brownies a mood boosting uplift with Peppermint or Spearmint. It reminds me of the Chocolate Cake with pastel green coloured Mint Custard we used to get for school dinners. Think Mint Choc Chip and you are in the right ballpark.
A couple of drops of Tarragon or Thyme diluted in best olive oil and drizzled over Roasted Chicken is a beauty to behold. Don’t wait for Sunday, try it on your midweek chicken for a treat. Thyme has hidden aphrodisiac qualities too. Probably best for a Scent Dinner for two, wink wink.
Spices
In just the same way that we have an array of herbs, we have a whole raft of spices to join the Scent Dinner party too. Again, caution is needed when using Cinnamon*and Clove Bud* please, just go easy please and make sure they are well diluted in an oil base first.
I think Cardamom and Orange is a marriage made in heaven, even a dash of warming Ginger adds to what is already perfection in my eyes. One of the most beautiful things I have tasted recently is a Cardamom and Orange Custard Tart. This is a comparative recipe that you could add essential oils to for your Scent Dinner. Why not try a dash of Nutmeg too? Gorgeous! All of these essential oils have wonderfully soothing effects on your digestive system, thanks to their digestive qualities.
One of my favorite green herbs is Coriander, but I equally love the warmth of Coriander Seed. Though I will be honest, I find them both tricky to use as essential oils in a culinary sense. However, it is rather wonderful stirred through steamed Rice for Jerk Chicken.
Pink Pepper and Black Pepper, gah! Now we are talking about my love language. My husband laughs at me every day for the amount of Black Pepper I grind over my food. Little does he know the amount of White or Black Pepper that went into the actual recipe. Even for my lunch today, I savored that aroma of freshly ground Black Pepper on my Mac and Cheese.
Pepper has stimulating effects and is a rather useful aphrodisiac. Try it out for yourself by grinding Pink Peppercorns over Strawberries with White Balsamic Vinegar laced with a drop of Pink Pepper essential oil for a special dinner.
Florals
Florals are the trickiest category to do well. Too much and you feel like you are eating a bar of soap and too little and the effect is lost entirely. Gauging the perfect balance is a bit of an art. If you choose florals, do a practice round or two first to test it out.
Make sure you test the same bottle of oil, as they can vary between bottles, just like your packets of Chilli powder can vary in intensity of heat and flavor.
Lavender
Lavender is the oil that people seem to plump for the most, probably because it is seen as being the most benign, but actually it’s the hardest essential oil flavoring to balance well. I like it mixed with Thyme and Oregano in Olive Oil for basting roasted chicken thighs to serve with new potatoes and a Mediterranean inspired salad. Lavender doesn’t always have to be used in sweet recipes.
Lavender’s qualities can be used to soothe, relax and soften us. Next time you have a cough or cold, reach for Chamomile tea, drop in a sprig of fresh Thyme and a couple of drops of Lavender essential oil diluted in a tsp of Honey.
Rose
You can give me a Rose or Violet Cream Chocolate anytime of the day or night and I’ll take it, I can’t resist them. Both of these florals work well in sweet recipes, but I also love the way Persians and Middle Eastern cuisines use Rose in food and condiments, like Rose Harissa. Rose works very well with mild spices.
Rose has many qualities, but is particularly good at uplifting us and making us feel better in ourselves. Think of sniffing that first truly fragrant summer rose. It makes me feel like nothing else in the world. It can be very useful for men and women, so if your Scent Dinner is just for two, definitely work Rose into your menu.
Rose Geranium
One of my favorite florals to work with is Rose Geranium, as I said earlier my Apple and Rose Geranium jelly is a thing of beauty and the preserve people ask me for the most, next to my Apple Sauce (I could make a 100 wt and it still would not be enough to satisfy my family).
I feel it works well in baking, preserves and could work well with a firm white fish, sea vegetables and a sharp dash of Lemon for balance.
Like Rose, Rose Geranium can uplift you and has actions that help to relieve stress and depression, but it is also a wonderful stimulant and tonic and can really help get the conversation started as your guests relax, and let go a little.
Ylang Ylang
I’m on the fence about Ylang Ylang*. I have recipes using it, but honestly have never been compelled to try it. I know it smells incredible, but I'm not sure the flavor will live up to the aroma. If you try it, please let me know your thoughts. Again, an asterisked essential oil, was used only in very small dilutions and diluted well. Avoid it if you have very low blood pressure and don’t use it in the first 37 weeks of pregnancy.
How To Use Essential Oils For A Scent Dinner
We have talked a lot about using the essential oils in the recipes themselves, but there are other ways you can introduce their scents into the Scent Dinner experience.
In The Food
This is where you need to employ your imagination and creativity to give you new and innovative ways of using essential oils to support your Scent Dinner experience.Why not serve an amuse bouche to clean, freshen and reset the palette, and the nose, between courses. Taste and scent are closely related and essential oils like Grapefruit are great palette cleansers. Try this Watermelon Chilli Salt Amuse Bouche from The Viet Vegan, lace it with a drop of diluted Grapefruit oil.
On the dinner table, serve iced water with a couple of drops of Lemon oil. After the meal, change it out for a couple of drops of Peppermint, to clean and freshen the mouth.
Are you a showy person and like a bit of theater and drama? Consider how you will serve your food. Could any of your courses be served mildly smoked, under a glass dome, so you get a dramatic swirling and tendrils of fragrant smoke as you remove it. Your wood can be infused with essential oils before smoking, to imbue it with an extra layer of scent and flavor. The Duck recipe in Part Two is an ideal candidate for this.
After your Scent Dinner consider how you can include essential oils in a colorful and flavorful cocktail, while you all kick back and relax and discuss your experiences. Try a drop or two of Lemon and Lavender essential oils in this Lavender Limoncello Spritz from Veggie, Vines & Vibes.
Give your guest a choice of flavored salts to season their food to their own taste. Only if you aren’t offended at anyone seasoning your cooking that is! Create salts with citrus zests, herbs or spices and a couple of drops of complimentary diluted essential oils. This is a lovely way of using Rosemary essential oil safely because you are using it in such a tiny amount but still getting a resounding effect from it. In The Dining Room
At your Scent Dinner, you need to be mindful of not disturbing your guests too much at the table, or faffing too much between courses. Especially, when your guests are hungry and just want to be fed.
In terms of the room itself, set the theme for your Scent Dinner with a Room Spray with a blend of essential oils suited to your menu or even have a different spray for every separate course.
Don’t forget you can make your own carpet deodorizer, laundry detergent, and tumble dryer sheets to get your room, and table linen, pristine and ready with a layer of luscious scent already in place.
Layer the fragrance through the room by using aromatherapy diffusers, reed diffusers, scented candles or wax melts. It’s important they aren’t too heady though, you don’t want to give everyone a headache. Especially if you have numerous candles, use a lesser intensity for a Scent Dinner. Subtle is better, you want people to engage their senses, not shut them down because the pervading scent is too overpowering.
Make your candles and diffusers easy to swap out between each course and replace them with new variants that suit your next course. Allow a few minutes for the aromas to disperse before serving the next course of your Scent Dinner.
If you are crafty, make some scented pads that can be served warm underneath the plate. The aroma will be infused alongside the food. This is where you need to be subtle and not overpower the delicious aroma of the food, but complement it beautifully.
Again, if you have some skills with flowers or floral centerpieces, make them subtly scented and swap them out between courses, if it will not disturb your guests too much. This also taps into the visual aspects where you can also play with color and texture.

Do your research in terms of recipes and source the best food possible. Buy the best quality you can afford, even if that means opting for a cheaper cut of meat. I’d rather have organic grass-fed pork vs antibiotic Beef! It’s no second choice. (In truth, I’d always choose a good pork chop over a filet steak).
Good Wine
Get the wine right to enhance your experience and take your ideas and recipes along with the essential oils to a good vintner and try some examples under their advice. I am sure they will relish a new kind of challenge and enjoy the process as much as you.
The Right Guests
Be thoughtful in your music choices and even more considered in your guest's choices. If your partner is a heathen like mine, leave them off the guest list. (He just said, that unless it has the scent of bacon, sausage, and chips, he’s not interested).
This is YOUR experience, own it and kick out the naysayers.
Fragrant Heaven
Turn your Scent Dinner into a fragrant heaven with citrus essential oils like Lemon and Grapefruit. Opt for herbal essential oils like Thyme and Sweet Basil.
